Simple home made egg noodles
Use Large or Jumbo eggs
Use a good grade not the cheap store brand
This will be adjusted depending on humidity
extra needed for flouring the work surface
Set up your mixer with a dough hook
Combine Flour, eggs, and salt and mix at low speed until combined
add water until the mix just comes together
Make small balls and feed them into a pasta roller
continue to fold strips in half and re run them until the sheets are smooth and about 1/8 inch thick
Cut sheets into 3" long pieces
After all the dough has been rolled change to a Fettucini cutter and run the strips through the cutter until are are cut. dusting with flour to keep the noodles from sticking
spread noodles on wire rack and let them dry.
Cook noodles in 3 quarts of chosen stock until tender
You can also use a floured surface and a rolling pin to roll the pasta dough out and cut them with a pizza cutter
