Cook at for 5 hours rotating racks and turning them every hour
Remove from rack while warm, let cool and enjoy
refrigerate unused Jerky for a week or 2

If you do not have a Jerky Cannon you could place the meat between 2 pieces of wax paper or parchment paper and roll to about 1/4 inch thick with a rolling pin.
