Egg Noodles

These are my homemade egg noodles that I use in my beef and noodle and chicken and noodle dishes

Egg Noodles
Simple home made egg noodles

Ingredients
- 2 each eggs Use Large or Jumbo eggs
- 2 cups flour Use a good grade not the cheap store brand
- 2 pintchs salt
- 2 table spoons water This will be adjusted depending on humidity
- flour extra needed for flouring the work surface
Instructions
- Set up your mixer with a dough hook
- Combine Flour, eggs, and salt and mix at low speed until combined
- add water until the mix just comes together
- Make small balls and feed them into a pasta roller
- continue to fold strips in half and re run them until the sheets are smooth and about 1/8 inch thick
- Cut sheets into 3" long pieces
- After all the dough has been rolled change to a Fettucini cutter and run the strips through the cutter until are are cut. dusting with flour to keep the noodles from sticking
- spread noodles on wire rack and let them dry.
- Cook noodles in 3 quarts of chosen stock until tender
Notes
You can also use a floured surface and a rolling pin to roll the pasta dough out and cut them with a pizza cutter
