Vegetable Soup (vegan)

This soup was hard for me to create and make.  I thought it would be better with some big hunks of beef and using beef stock.  I did given in and no meat or animal products where added.  I would not say it is organic but everything in it is made from carbon. :-).

• 2 tbsp olive oil
• 2 cups finely chopped leaks only use the white part
• 2 tbsp minced garlic
• 10 oz sliced carrots
• 2 cups diced red potatos peeled
• 1 1/2 cups corn frozen or fresh
• 1 1/2 cups cut green beans canned or fresh
